Beer & Bread 301: Designed for those looking to take their bread to the next level, curious about the process, or just interested in trying something new, this workshop will cover the basics of building, maintaining, and using a live yeast culture (a preferment usually called levain or sourdough). You will learn how to create and feed a starter, and work through the basic steps to bake pain au levain, a simple, naturally leavened bread that you can use as a template for other breads at home. We’ll explore some of the science behind the process, but the focus of this workshop is on using that knowledge to create tasty bread from simple ingredients.
